100% CABERNET SAUVIGNON
The wine was aged for 22 months. For the first 16 months, the wine was aged in 225- and 300-litre French oak barrels (50% new and and 40% second-use or older), 35% in various-sized foudres, and 5% in a cement egg.
“The Andean Cabernet Sauvignons from the Cachapoal River valley, in the area known as Alto Cachapoal, have somewhat remained in the shadow of the great Cabernets from Alto Maipo. However, despite their differences, they also exhibit significant character and a strong sense of place. Less minty and more fruity and herbal, like this 100% Cabernet example, a San Pedro classic full of ripe red fruit, generous with fine, firm tannins, and juicy acidity that provides crunchiness and vitality.“
